Gustavo Arellano is a features writer for the Los Angeles Times, covering Southern California everything and a bunch of the West and beyond. He previously worked at the OC Weekly, where he was an investigative reporter for 15 years and editor for six, wrote a celebrated column called "¡Ask a Mexican!" and is the author of several books, including Taco USA: How Mexican Food Conquered America. He’s the child of two Mexican immigrants, one of whom came to this country in the trunk of a Chevy.

Jose R. Ralat is Texas Monthly‘s taco editor. He has written for the Dallas Observer, Texas HighwaysD MagazineEater, among other media outlets. He was formerly the food and drink editor at Cowboys & Indians magazine. He has been featured by the New YorkerRemezcla, Telemundo, and the James Beard Award-winning First We Feast websites. The New York Times has called Ralat “an expert on the folklore of the taco.”

His book, American Tacos: A History and Guide will be published by University of Texas Press in April 2020. Check back soon for a pre-order link.
